hospitality 02 / a balanced cheese board

Every host should know how to put together a well balanced cheese board. They are quick, lovely and hold appetites off until the main event is ready. When at the store, try cheeses as often as you can, a lot of cheese mongers will let you taste at the counter. Find a few that will be your staples. Meat, fruit, nuts and condiments are what make the cheese plate exciting. The fig jam, garlic confit (recipe coming Friday) & tomato jam can be made in advanced and store in glass jars and then just set by the spread.
