gluten free bread and fish toastie

Aaron and I just got back from a peaceful vacation in Tulum Mexico, little internet and little electricity. It was perfect. I'll be posting our guide to Tulum on Friday so be sure to check back! Now for business...

We don't eat much bread but what I have found is that most gluten free bread is packed with junk. I want a bread that has protein, that will sustain me for longer. I found Comfy Belly's recipe for cashew brioche which is delicious but it was a little sweet and a little too moist for basic sandwiches. The recipe below is my basic bread recipe adapted from that lovely cashew brioche. 

We try our hardest to not waste any food, the toastie (or open faced sandwich) is an easy way to use up the fish from last night's dinner. The lime and honey drizzle, sea salt and cilantro is what makes this "leftover" lunch special.
