I posted this a long time ago and for some reason had the recipe written down wrong. Embarrassing but I'm here to fix it!
Don't get overwhelmed by the amount of dry ingredients. With gluten free baking it's tough to get the right consistency, each of these flours helps to gain a "normal" flour texture. I make the dry mix ahead and pre-bag each so it's less labor on a Saturday morning when all you want is maple syrup on fluffy pancakes served in bed!

Cook time: 10mins (if you use two large skillets at once)
Makes: 16 pancakes
